Eight centuries of silence, about to speak again
The Monastero Santa María della Scala was built in the 13th century by the Augustinian order on the hills above San Quirico d'Orcia. For centuries it served as a place of prayer, hospitality for pilgrims on the Via Francigena, and agricultural production — wine, olive oil, and vinegar.
Oria is restoring the complex to its original vocation: a place of deep hospitality, rooted in the land, centred on wine. The restoration follows UNESCO guidelines to the letter — no compromises on authenticity, no shortcuts on materials.
UNESCO permits are currently in progress. When the monastery opens, Oria members will have priority access to 14 suites, the cantina, and the private dining room overlooking Val d'Orcia.

Private tastings with Roberto
One-on-one or small group sessions in the cantina. Roberto opens library vintages and explains the journey of each wine from vine to glass.

Mindful harvest walks
Dawn walks through the vineyard rows with Roberto or a guide. The silence of Val d'Orcia before sunrise. Reading the vines. Breakfast among the cypresses.

Aceto barrel visit
Access to the Tempus Manet aceto room — the 19th-century barrels of cherry, chestnut, oak, mulberry, juniper, ash, and acacia. The annual decanting ritual, up close.

A private dinner in the refectory or cloister garden, paired with Oria wines, seasonal Tuscan cuisine, and the silence of eight centuries of stone around you.
